Easy Oat Flour Waffles

Sometimes, on random Wednesday afternoons, my girls request waffles for dinner. I can’t think of one single time I’ve actually included them on my weekly meal planning menu, but as to be expected with kids, they like to go off script from time to time.

While there are some pretty good frozen waffles on the market with ingredients I can stand by, I typically just pull out my mini waffle maker, and make a quick batch on my own. My girls are always so excited for me to open the lid so they can see exactly how the waffles turn out. Sometimes I add too much batter, sometimes not enough. But I do always give it my all. 😉

This recipe is perfect because it comes together very quickly and includes ingredients I always have on hand. The waffles always come out super fluffy and light.

Oat Flour

Oat flour has something that your traditional all-purpose flour doesn’t have. Fiber! We all know that fiber is vital to keeping your digestive system moving in the way that it should, which in turn positively impacts all things in your body. It’s nice to be able to sneak that fiber in through fiber. Oats are typically gluten free (you’ll want to look for that label if you absolutely need to be sure there’s not gluten). This lack of gluten is what ultimately makes the waffles so light and fluffy.

Easy Oat Flour Waffles

Quick and easy waffles for the family

Ingredients

Ingredients
  • 1.5 cups oat flour
  • 2 tps baking powder
  • 1/4 tsp salt
  • 3/4 cup unsweetened plant milk (almond, cashew, etc)
  • 5 TBS unsalted vegan butter (melted)
  • 2 eggs (beaten)
  • 1 TBS maple syrup (optional)
  • 1 tsp vanilla extract

Instructions

Directions
  1. Add oat flour, baking powder and salt to bowl and stir.
  2. In a separate bowl, combine milk, melted butter, eggs, maple syrup and vanilla and whisk together.
  3. Add wet ingredients to dry ingredients.
  4. Heat waffle iron and lightly grease with vegan butter.
  5. Cook waffles until golden brown and fluffy.
  6. Enjoy!
