I have quite the love affair with sheet pan meals. What’s not to love? Put all your ingredients on one pan, toss them together with spices and olive oil, pop them in the oven, then voila! Your entire meal is ready.

Another beauty about this recipe is that you can easily switch out the protein. You can do cubes of tofu, sliced chicken breast, literally whatever suits your palette and preference. I’ve done all of the above. Chicken takes a few extra minutes to cook, but that’s about it.

Bell peppers are a wonderful addition to your diet. They are loaded with vitamin A, vitamin C and potassium. They have a wonderful crunch, that can take the place of some not-so-healthy crunchy packaged snacks. Each of the colors offers a slightly different taste. Maybe you’ll like them all, maybe you’ll stick with just one color — give them a try and let your tastebuds decide.

The Onion

If you’re used to cooking at all, you know that onions deliver all the flavor, right? But what else are onions good for? Onions have antioxidant and anti-inflammatory properties that can create a reduced cancer risk, improve bone health and aid in lowering blood sugar levels. These properties come from the vitamin C, folate and vitamin B6 found in onions.

Super Simple Shrimp Fajitas

A simple and super flavorable add on to your meal prep repertoire.

Ingredients

  • 1 lb shrimp (cooked or uncooked)
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 red onion, sliced
  • 2 TBS olive oil
  • 2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • pepper to taste
  • 1 TBS fresh lime juice
  • fresh cilantro.
  • Any tortillas desired

Instructions

  1. Preheat oven to 400 degrees.
  2. Coat sheet pan with a small amount of olive oil, about a teaspoon.
  3. In bowl, toss shrimp, sliced peppers, onion, olive oil and spices.
  4. Spread evenly on sheet pan.
  5. Bake 20 minutes.
  6. Remove from oven, drizzle with lime juice and top with fresh cilantro.
  7. Enjoy on any desired tortillas.
